BREADS – QUICK AND YEAST
Good Old Fashioned Pumpkin/Apple Bread
2 cups flour
2 tsp pumpkin pie spice
2 tsp baking powder
1/2 tsp salt
1/2 tsp baking soda
1 can (15 ounces) Libby’s 100% Pure Pumpkin
1/2 cup each brown and white sugar or use the brown and substitute Splenda for the white
1/2 cup Carnation Evaporated Fat Free Milk
1 large egg plus 1 extra egg white
1 Tbsp oil
1/3-cup nuts
1 golden delicious apple, peeled, sliced very thin and then diced
Measure oil, sugar, egg and egg white, milk and pumpkin together, set aside. Mix rest of dry ingredients together. Add to pumpkin mixture and carefully blend, add apples. Spread in a loaf pan and top with nuts. Sometimes I add the nuts to the bread with the apples. Bake in a 350 degree oven for about 1 hour or until done when tested with a toothpick. NOTE: also good served as a dessert in small thicker portions topped with whipped cream or whipped topping and then topped with toasted pecans. OR top with hot applesauce and cinnamon or make a fresh pear sauce to top dessert with.
